    The Scottish Food Standards Agency (FSS), the UK Health and Safety Authority (UKHSA) and the Food Standards Agency (FSA) recommend that people over the age of 65, pregnant women or people with weakened immune systems should ensure that they are thoroughly cooked
    before consuming ready-to-eat smoked fish.
     
    FSS has created an online smoked fish tool to help manufacturers evaluate their practices, providing advice and guidance to support safe production, including the use of cold/hot smoking methods and shelf life
