According to Chen Xiaoming, director of the Institute of Agricultural Product Preservation and Processing Technology of the Municipal Academy of Agricultural Sciences, because purple corn is rich in anthocyanins that are beneficial to the human body, the institute has joined forces with the purple corn planting demonstration base located in Yuquanzhuang Village, Dongshi Ancient Town, Jizhou District, to help local villagers make purple corn into more nutritious food
。 This project increases the added value of purple corn by processing purple corn anthocyanin-related products, and cultivating edible fungi with by-products such as corn ear shafts and straw, as well as processed feed, and fungus bran organic fertilizer, and finally realizing the standardized, comprehensive and high-value utilization
of purple corn from varieties, intensive processing, by-product species breeding and other links 。 At the same time, the institute also invented anthocyanin-induced nutrient enrichment agents for purple maize plants in the process of project research, which can increase the anthocyanin content of purple maize plants by 3 times or more, and through the development of intensive processing products, purple corn can add more than 10,000 to 20,000 yuan per mu, effectively improving the added value of
