Stir-frying filling, sesame oil is a gourmet condiment that most families cannot do without, stir-fry soup, and finally drizzle a little sesame oil, is the finishing touch
.
How to buy, eat and store sesame oil is what industry experts say
.
Smell and read the label
Fragrant sesame oil is a unique traditional edible oil in China, with a rich flavor, which is called sesame oil in the north of China, and used to be called sesame oil
in the south.
Wang Xingguo, executive vice president of the Oil and Fat Branch of the Chinese Cereals and Oils Society and professor of the School of Food Science of Jiangnan University, introduced that the common sesame oil on the market at present includes two kinds of small ground sesame sesame oil and sesame sesame oil, the difference is mainly related
to the production process.
Small ground sesame sesame oil is a finished sesame oil prepared by the water substitution method after the sesame seeds are roasted and stone ground and then prepared by the water substitution method, which has a rich fragrance and is generally used
as cold seasoning oil.
The water substitution method has a history of more than 400 years in China, the sesame seeds are fried and ground into a sauce blank, and then a certain proportion of drinking water is poured into the sauce blank, using the characteristics of protein and dietary fiber in sesame seeds with different affinity for oil and water, different specific gravity of oil and water, through stirring, precipitation and other ways, so that oil and water are naturally separated is a very intelligent traditional process
.
Sesame sesame oil usually refers to the finished sesame oil prepared by pressing process after the sesame seeds are roasted, its aroma is slightly lighter than that of small ground sesame sesame oil, and the color is relatively light.
In addition to being used as a cold seasoning, this sesame oil is also used in some places for stir-frying
.
How to choose good quality sesame oil, Wang Xingguo reminded consumers to pay attention to the following three points:
Read the label
carefully.
Pay attention to check the ingredient list, oil grade (according to the national standard sesame oil has two grades, first and second grade), implementation standard, manufacturer, production license number, production date and shelf life and other identification information
.
It should be emphasized that sesame oil must be marked with sesame oil as the only ingredient, or marked with sesame seeds as raw material, and cannot contain other oils or other varieties of vegetable oil
.
Some edible oil products blended with sesame oil and other vegetable oils on the market can only be called edible vegetable blended oil, and its ingredient list can also have other vegetable oils in addition to sesame oil, which can not actually be regarded as sesame oil
.
Observe the color
.
Small ground sesame sesame oil is pale red or orange-red; Sesame sesame oil is lighter in color than small ground sesame sesame oil, red with yellow; Edible vegetable blends oils containing sesame oil may be lighter in color
.
Smell the smell
.
Sesame oil has a pure, intense fragrance, and edible plant blends containing sesame oil have a lighter aroma and other oily odors
.
It should be seasoned to avoid high temperature
Relevant studies have shown that sesame oil not only tastes fragrant, but also contains more nutrients that are beneficial to human health
.
Such as linoleic acid, an essential fatty acid that is beneficial to heart and blood vessel health, sesamol and sesamol with antioxidant effects, as well as vitamin A, vitamin B and vitamin E
.
Sesame oil "acts" in the kitchen but is very low-key, "appearance" often a few drops, to the end
.
Can you "weigh on" sesame oil so that it can also be used for stir-frying like other edible vegetable oils?
Wang Xingguo said that compared with soybean oil, peanut oil and other vegetable oils, sesame oil is indeed a relatively special existence, and the reason why it is more suitable for seasoning rather than stir-frying is mainly due to the following two reasons: First, sesame oil has a strong aroma, and it will cover up the original taste of the dish when used for stir-frying, so that it "dominates the crowd"
.
At the same time, some sesame oil, especially small ground sesame oil, because the raw material itself is stir-fried at high temperature, there may be a faint paste when the stir-fry is heated, which affects the taste of the dish
.
Second, the high temperature during stir-frying will destroy the nutrients of sesame oil, and will also produce harmful oxidized fats and free radicals
.
Although sesame oil has the effect of lubricating the intestines, because of the large amount of oil, excessive intake may increase the burden on the gastrointestinal tract, especially in people with severe diarrhea
.
It is worth noting that people who are allergic to sesame seeds should avoid ingesting sesame oil, especially for infants and young children, so as not to induce allergic reactions
in the body.
Therefore, moderate consumption is the best choice
.
Preferably glass small packaging
Compared with vegetable oil for stir-frying, sesame oil used for seasoning often takes longer after opening, and how to store it safely to prevent deterioration should be more careful
in daily life.
Wang Xingguo introduced that the shelf life of sesame oil is generally 18 months, and it should not exceed 12 months
at room temperature.
It should be noted that the quality reduction of sesame oil is a gradual process, most of the time, this gradual process can not be found simply by the nose and eyes, it is recommended to buy small packages of sesame oil as much as possible and eat it
in a short time.
And if sesame oil has a smell such as hara, be sure not to eat
it again.
For daily preservation of sesame oil, Wang Xingguo recommends that consumers pay special attention to the following two points:
First, when storing sesame oil at room temperature, try to seal, low temperature, avoid light and dry, especially pay attention to stay away from higher temperature operating areas such as stoves to avoid grease oxidation, resulting in quality reduction
.
There is a view that sesame oil can be put in the refrigerator to prolong the storage time, but doing so may cause the oil to crystallize, although it does not affect the consumption, but the taste will deteriorate
.
Second, sesame oil is placed in a compliant plastic bottle for a short time, and the safety is beyond doubt, but from the actual use point of view in daily life, it is recommended to give priority to glass bottles
for preserving sesame oil.
In addition, it is best not to use a rubber stopper for the bottle stopper of sesame oil, so as not to string flavors for a long time, if the bottle itself is a rubber stopper, you can use plastic wrap to make an isolation
