The total number of colonies is an indicative microbial index, which is mainly used to evaluate the cleanliness of food and reflect whether the food meets the hygienic requirements during the production process. Excessive mold in food may be caused by mold contamination of processing raw materials, or improper control of product storage and transportation conditions. Mold contamination can not only cause food spoilage, but also produce toxins and cause food poisoning.

"Total acid" represents the amount of acetic acid produced in the fermentation process of vinegar. For brewed vinegar, the higher the acidity, the higher the degree of fermentation, the stronger the sourness of the vinegar and the better the quality.
Non-volatile acid is one of the total acids in vinegar, mainly lactic acid, which can make the sour taste of vinegar long, soft and delicious. "Brewing Vinegar" (GB/T 18187-2000) stipulates that the non-volatile acid (calculated as lactic acid) in solid-state fermented vinegar should not be less than 0.50g/100mL. Insufficient non-volatile acid content will affect the taste and flavor of vinegar to a certain extent. The reason for the unqualified non-acidity may be improper control of the fermentation process during the production and processing process.
Alcohol is also called alcohol, which refers to the number of milliliters of ethanol (alcohol) contained in 100 milliliters of wine at 20°C, that is, the percentage of volume (capacity). Alcohol is an important physical and chemical index of alcoholic products. Substandard content mainly affects the quality of the product. Clothianidin is a kind of insecticide in the neonicotinoids. It is a new type of insecticide with high efficiency, safety and high selectivity. Nibendazole is also called pyraclostrobin and benzonitril, which is a triazole systemic fungicide. According to the National Food Safety Standard Maximum Residue Limits of Pesticides in Foods (GB 2763-2019), the maximum residue limit of nibazole in bananas is 0.05 mg/kg. The reason for the excessive nibendazole in bananas may be that the growers do not know the safe interval for using pesticides and thus use pesticides in violation of regulations.
Chlorpyrifos, also known as chlorpyrifos, is currently one of the most widely used organophosphate insecticides in the world. It has the effects of contact killing, stomach poisoning and fumigation. According to the National Food Safety Standard Maximum Residue Limit of Pesticides in Food (GB 2763-2019), the maximum residue limit of chlorpyrifos in celery is 0.05 mg/kg. The reason for the excessive chlorpyrifos in celery may be that vegetable farmers do not understand the safe interval of using pesticides and thus use pesticides in violation of regulations.
