Study on promoting calcium absorption and mineralization of phosphopeptide of yolk protein
Summary
The osteoblast model was constructed and it was found that the phosphorylation degree of phosvitin (PV) is a key factor to promote the proliferation and mineralization of osteoblasts.
On this basis, it has been explored that temperature and pressure cooperative pretreatment, combined with protease complex enzymatic hydrolysis, can significantly improve the efficiency of PV hydrolysis while avoiding the loss of phosphate groups.
