In order to enable relevant enterprises to have an in-depth understanding of the differences in food additive supervision in various countries/regions, the previous issues of Food Partner Network have sorted out the food additive regulatory requirements of the United States, the European Union, Japan, Canada and other countries/regions, and this issue introduces the compliance requirements
    of Korean food additives.

    1.
Regulation of food additives in South Korea

Korea defines food additives as follows: "Food additives" refer to substances
used in food for the purpose of sweetening, coloring, bleaching, or preventing oxidation during food production, processing, cooking, or preservation.
    In this case, substances
used to sterilize, disinfect, and sterilize utensils, containers, and packaging, and may migrate indirectly into food.

Food additives approved by the Korean Ministry of Food and Drug Safety can only be used, among which the Korean Food Additives Code stipulates the food additives that can be used in various types of food and their use standards
    .
For food additives not stipulated in the Korean Code, enterprises can apply to the Korean Ministry of Food and Drug Safety, and decide whether to recognize them as food additives
after discussion by food testing and inspection agencies designated by the Ministry of Food and Drug Safety.

    2.
Compliance requirements for Korean food additives

Korea's Food Additives Code stipulates the food additives that can be used in various types of food, and the limits of use, scope of use, and use of food additives must comply with this regulation
    .

To better understand the compliance requirements for food additives in Korea, the following is an example of how to do so:

Can ammonium aluminum sulfate be used in canned strawberries?

    (1) Determine the food category: canned strawberries belong to fruit and vegetable products

    (2) Confirm the use of aluminum ammonium sulfate in fruit and vegetable products

According to the food category fruit and vegetable products in the Codex Alimentarius, it is confirmed that the food additives that can be used contain ammonium aluminum sulfate
    .

Third, the labeling of Korean food additives

Korea's "Labeling Standards for Food, etc.
" clearly stipulates that food must be labeled with food additives, and the labeling method is as follows:

    (1) Food additives that are directly used or added when producing and processing food for the purposes specified in Table 4 of Korea's Standards for the Labeling of Food, etc.
shall be marked with their name and purpose
    .

    (2) Food additives in Table 5 of Korea's Standards for the Labeling of Food, etc.
shall be marked with the name published in the Food Additives Code or the abbreviation
    specified in the table.

    (3) Food additives in Table 6 of the Korean Standards for the Labeling of Food, etc.
shall indicate the name published in the Food Additives Code or the abbreviation or main purpose specified in the Table (the main purpose is its main purpose when repeated use is its main use), but when it is not the main purpose specified in Table 6 but used for other purposes, the name or abbreviation
of the published food additive shall be indicated.

    (4) Food additives of mixed preparations shall indicate the specific names of the published mixed preparations and indicate the names of all food additives constituting the mixed preparations in parentheses, and the names of food additives may be replaced by
the abbreviations specified in Table 5 or Table 6.

In addition, Korea's "Standards for the Labeling of Food, etc.
" also stipulates other specific labeling items for
    food additives.

For example, if sodium glutamate is in Table 4 of the "Labeling Standards for Food, etc.
", it is necessary to indicate its name and use, that is, it is labeled as sodium glutamate (flavor enhancer).
